The reason the sails you see are only offered in those colors is because Nacra 20, F18, and etc. sails are made out of Pentex which in order to make in a color you have to order thousands of yards, so unless someone decides to offer a color standard on all boats then we need to find a whole lot of customers interested in that color!
If you're not worried about conforming with class rules then you may be able to find some laminated material in colors, but it's unlikely to be Pentex.
Performance Sails offers Red, Blue, Green, Black, White.. in Polyester Laminate like below. Polyester fiber (essentially the same as dacron) is much more widely used, so it can be laminated into a mylar sail without committing to a massive amount of yards. It's a little bit less expensive, it's a tiny bit heavier and will stretch more under use, whether that matters to you in how you sail is up to you. The other option is to color the mylar film, which is also easier to do without massive commitment, but there is still a commitment of a lot of yards which is why it's not widely offered. You can see the blue actually has colored mylar.
In Pentex, Performance Sails offers White (white pentex fiber with white mylar) and black (black pentex fiber with clear film). Our old smoke and silver, the film was died making it harder to see through, I switched to white for this reason, last year when the black came out, the fiber was black with clear film and I think it's the easiest to date to see through.
