Your best option would be to find a sunfish spare and cut it to length.

The pole is easy to find. For an aluminum pole go to a local metal distributor and get an aluminum pipe to match your snuffer system. For a carbon pole, use a sailboard mast. Your best bet would be to find a local cat dealer in Portugal Nacra or Hobie will be able to hook you up. You can contact Nacra Europe to locate a dealer http://www.nacrasailing.com/ . You can import the parts from many dealers in North America but since the sport is more popular in Europe you are probably better looking closer to home.

I've read that the sunfish spar is cheap, anodized already and a perfect fit.

Yep, the booms for mid pole. They are the same extrusion as the original.
The mast may work for an end pole setup, but I don't know for sure. I don't have a mast to compare.

sunfish mast is 10', typical spin pole is 12', so mast is to short. End poles from Nacra are 2".
