I've ordered in mid Fall and got it mid Spring. It was a long wait, but it would not eat up on my sailing season. Since the sailing season is now approaching, I would doubt if you can get a discount.

Pentex is always silver-gray. You have a choice on the trim: red, white, black, etc. If you want a color, you can go with Dacron or alike (polyester) sail cloth, which is also significantly cheaper.
