Do you think it is ok to stack 2 p16s on top of a 5.8 for the offseason?

Is snow load an issue for you? I have seen the trailer supports driven through the hulls of a Stiletto 27 due to heavy snow. I think I would rather have supports that carried the load of each cat directly to the trailer frame or ground.
You could knock something up out of framing lumber and deck screws for the off season. The money and effort to do that would be a lot less than a major hull repair job.

That's a shame about the Stiletto 27 - I hope to have one of those someday if not a bigger cruising cat or tri
I was thinking the bottom cat would be on the ground or some structure. Perhaps I will build a rack of some sort.

I might end being that way too - haven't sailed that boat yet.
Going down to sail this weekend, bring back one of the prindles and the rest of the NACRA parts.
Probably will step the 5.8 when I get everything together

Have that bottom cat off the ground by a few inches. Use some out door carpet to pad the racks. Pressure treated lumber would serve you longer but the price would be higher. I have carpenter bees and woodpeckers here in VA. they wreak havoc on untreated wood.
