dumb question: I just got a hitch put on my car so I can actually move the boat i intend to buy.
Do I need a 1 7/8 (or whatever it is) or a 2 inch ball for a Hobie 16.

Better check the trailer tongue for the correct size. If you put a 2" trailer on a 1"7/8 you will lose it. I have made that mistake more than once.. It is not a pretty sight. The toungue will tell you. -

At one point I had two Hobie 18's and had one of each size trailer coupling.
So I replaced my normal hitch ball with a "quick change" ball that I could change easily. It also helps if you end up moving or launching someone else's boat.
