fwiw- I think you're doin' fine.
I must say you guys have a special starting technique... 🙂
On day 1 I would recommend:
upwind
- weight a lot more to the front
- mast rotation more open
- maybe more sheet tension (difficult to see)
downwind
- weight more to the front (sail the boat bow down in flat waters (at least it is the case for the Falcon)).
Day 2
seems pretty ok
