While hanging on the trap seat how do you uncleat quickly?
I was out reccently and I darn near rolled twice as wind gust hit. I find while hanginr the scope on the main sheet is to far away to uncleat quickly. This is especially true when full sail in good winds.
Tips are appreciated.

You can adjust the angle of the cleat so that it is higher and a pull on the sheet will release. You then have to hold the sheet higher up when sheeting to get it in the cleat. I prefer to have a lower cleat, so it cleats as I sheet in. I then snap the line to release and hold. If it is gusty... I never leave cleated for long.

Also, keep your hand on the sheet at ALL times and with a small tension between you and the cleat. Don't simply grab the sheet somewhere... there could be an amount of slack between you and the cleat that prohibits a quick release.
